Fennel and pineapple smoothie

A few smoothies in the week are a great way to get extra portions of fruit and veg into your diet quickly. Make them yourself and enjoy them for breakfast. You can top them with sliced fresh fruit, granola, nuts and seeds to make them more filling so they see you through till lunchtime.

Fennel is a good source of fibre and vitamin C. It’s also thought to have anti-inflammatory properties and alleviate digestive issues.

Ingredients 

½ medium-sized fennel bulb
1 cup frozen pineapple
1 cup almond milk
1 tbsp chia seeds
1 tbsp flaked almonds
1 tbsp pumpkin seeds
1 tbsp pecans

Serves 1

Directions

Blend the almond milk with the sliced fennel and pineapple. Pour into a bowl and top with your favourite fruit, nuts and seeds combination.

Tip: Frozen pineapple gives a thicker, creamier texture. If you’re using fresh pineapple, use a bit less milk to retain the thickness of the smoothie.
