Kiwi Cucumber Smoothie

Fruity and fresh, this is the perfect green smoothie for a summer breakfast. Kiwi, cucumber, lime and water, it’s so hydrating.

If you’re not loving the green smoothie trend then you have to try this recipe. It’s green, it contains leafy greens, it’s bursting with vitamins and minerals but it’s fruity rather than veggie tasting.

My husband doesn’t like spinach in smoothies, he finds the spinach flavour comes over a bit too strong. This smoothie is different. Yes, it has spinach in it but kiwi is the dominant flavour and the lime juice makes it really tangy.

It’s also the perfect green smoothie recipe to introduce your kids to.

Kiwi fruits have more vitamin C than an orange so really give your immune system a boost. Plus they’re a good source of vitamin E, which is great for your skin, hair and nails.

The spinach, kiwi fruits and banana are all good sources of potassium, which will keep your heart healthy and lower your risk of high blood pressure.

Ingredients

50mls water
½ cucumber
Handful of spinach
3 kiwi fruits
Juice of half a lime
1 banana
1tbsp chia seeds
Handful of raspberries

Serves 1

Directions

Blend the water and spinach. The spinach takes more blending than the fruit so blend it first then add the rest of the ingredients. This stops the smoothie from getting too warm.

Add the cucumber, peeled kiwi fruits, lime juice and half of the banana. Blend, pour in to a bowl and top with the remaining banana, the chia seeds and berries.

Tip: If you plan to drink this smoothie on the go, blend the water and spinach first. Then just add everything else, including the toppings, and blend again.
