I found wholewheat giant couscous in the supermarket the other week and it’s a new favourite. It takes only a few minutes longer than regular couscous but makes a far more substantial meal.

I eat this recipe as a meal on its own but it would work really well as a side dish too.

This is a great banish the beige recipe. You can bulk it out with whatever veggies you have in the fridge. Although I think it really works with the combination below. This recipe gives you a nice helping of greens with the occasional mouthful of heat thanks to the piquante peppers. The plentiful vegetables and the miso paste are great for your gut, which will help your body to heal your skin.

Giant couscous makes a great store cupboard ingredient for a quick and healthy meal. Just cook it, stir through some vegetables and dress with a little olive oil and lemon juice or even a teaspoon of pesto and some parmesan shavings. Simple and takes no planning. 

Miso mushroom couscous - acne diet recipes

Ingredients 

300g giant couscous
1 tbsp extra virgin olive oil
6 spring onions, sliced
4 chestnut mushrooms, sliced
4 large handfuls of kale
1 tsp miso paste
2 tsp tomato purée
4 tbsp water
4 sunblush tomatoes, chopped
6 hot piquante peppers, chopped
4 handfuls of rocket

Serves 4

Directions 

Cook the couscous according to the pack instructions. Look for wholewheat couscous if you can get it. You can substitute the couscous for quinoa or brown rice if you’re gluten-free.

Add the olive oil, spring onions and mushrooms to a pan. Sauté for a few minutes until both start to soften. Next, add the kale and tomato puree and sauté until the kale begins to wilt. This will only take a couple of minutes.

Remove from the heat and add the miso paste and water to help loosen the paste then add the couscous, tomatoes and peppers. Adding the miso paste right at the end helps to preserve the live probiotics for maximum benefit.

Put the fresh rocket in your bowls and serve the couscous on top.

Tip: this salad is served warm but it also makes a delicious cold lunch the following day. Fill your lunchbox with the couscous first then put the rocket on top so it doesn’t go soggy before you get a chance to eat it.
