Butterbean-salad-bowl

Butter beans are a great source of protein and fibre. Plus they count towards your 5-a-day. The fibre helps to keep your digestive system healthy and makes this dish more filling than your average salad.  

Being a working mum, I like to make meals that are quick and easy with minimal fuss ingredients. But I also like my food to be tasty and nutritious. Feta cheese and sunblushed tomatoes are my go to ingredients here to add lots of flavour to this super healthy salad.

This recipe keeps really well if you’re making it in advance or serving it up as a side dish. It won’t go soggy like some other salads. I find it’s best served at room temperature. Taking the chill off the butter beans means they have a little less bite so taste even creamier.

Ingredients 

1 carton (380g) butter beans
3 inch piece of cucumber
10 cherry tomatoes
5 sunblushed tomatoes
1 tsp paprika
2 tbsp extra virgin olive oil
100g feta cheese
Handful of rocket
Salt and pepper to taste

Serves 2

Directions 

Chop the cucumber, tomatoes and feta. Add to a mixing bowl with all of the other ingredients, except the rocket.

Mix well and serve with the rocket on the side. It’s as easy as that!

Tip: this salad keeps really well overnight if you’re boxing it up for lunch. Just put the butterbean salad in your lunchbox first then top with the rocket. This will stop the rocket from turning soggy before you eat it.
