Nuts and seeds are such an easy way to get vitamins and minerals such as vitamin E, zinc and selenium as well as omega-3 fatty acids in to your diet, all important for glowing skin.

I have such a sweet tooth. The honey and dried cranberries combine really well to satisfy my cravings for something sweet. I eat plain nuts pretty much every day but I also love trying different spice mixtures to give them a bit of a flavour boost on occasion.

I typically reach for the snacks about 3pm so I try to be prepared by carrying a little box of nuts with me so I have something healthy to snack on when the mood strikes.

Ingredients

200g almonds
200g cashew nuts
100g dried cranberries
60g pumpkin seeds
1 tbsp honey
1 tsp cinnamon
Freshly ground salt

Directions

Preheat the oven to 160°C.

Put the almonds and cashew nuts in a large mixing bowl. Add the honey, cinnamon and a generous pinch of freshly ground salt. I use Himalayan Pink Crystal Salt. Mix to coat well.

Line a baking tray with baking paper and transfer the mixture to the tray. Bake in the oven for 12 minutes. Stir the nuts half way through cooking.

Once you’ve removed the nuts from the oven, allow them to cool then add the dried cranberries and pumpkin seeds. Store in an airtight jar for up to a week.
