Classic chicken curry

Chicken thigh curry

Everyone loves a curry. We certainly do in my house. There are a lot of ingredients in this classic curry recipe but I promise you it’s really easy.

As with any curry, the flavours are richer the second day so this is a great one to make in advance and reheat when you’re ready to eat. Curries are also really healthy for you. The takeaway kind, not so much, but homemade curries are packed full of ingredients that are so good for you.

This one has turmeric, garlic and ginger in it, all of which are thought to have anti-viral and anti-inflammatory properties and are good for digestive and skin health.

This recipe is very adaptable. I add red pepper and spinach but you can add whatever vegetables you fancy or have in the fridge.

Ingredients

1tbsp coconut oil
6 skinless and boneless chicken thighs
1 onion
1 red chilli
4 garlic cloves
1tsp freshly grated ginger
1tsp turmeric
1tsp ground coriander
1tsp cumin
2tsp garam masala
4tsp curry powder
50mls water
1 can coconut milk
1 can plum tomatoes
2 star anise
2 cardamom pods
Salt
Black pepper
1 red pepper
120g spinach

Serves 3-4

Directions

Add the coconut oil to a pan and melt over a medium heat. Place the chicken thighs in the pan and sear each side. Remove the chicken from the pan and set aside.

Slice the onion, red chilli and garlic and add to the pan used to sear the chicken. Add the ginger, turmeric, ground coriander, cumin, garam masala, curry powder and the water. Cook for 3 minutes.

Return the chicken to the pan and stir to coat well in the spice mixture.

Add the coconut milk, tomatoes, star anise and cardamom pods. Season with salt and freshly ground black pepper.

Cover and simmer for 20 minutes.

Chop the red pepper and add to the curry with the spinach. Cook for a further 5 minutes. Ensure your chicken is piping hot and cooked all the way through.

Serve with brown rice.

Tip: I find one red chilli is perfect for this dish because I’m usually serving it up as a family meal. If you like it a bit hotter, add an extra chilli and/or a teaspoon of cayenne pepper.
