Honey roasted trail mix

3rd July 20196th November 2023

Trail-Mix

I have such a sweet tooth. The honey and dried cranberries combine really well to satisfy my cravings for something sweet. I eat plain nuts pretty much every day but I also love trying different spice mixtures to give them a bit of a flavour boost on occasion.

Butter bean bowl

3rd July 20196th November 2023

Butterbean-salad-bowl

Butter beans are a great source of protein and fibre. Plus they count towards your 5-a-day. The fibre helps to keep your digestive system healthy and makes this dish more filling than your average salad.

Beetroot and feta quinoa salad

30th June 20196th November 2023

Beetroot feta quinoa salad

This colourful salad is super tasty and so good for you.

I love making salads that have a bit more to them than just lettuce, cucumber and tomato. A salad should be tasty, filling and fresh. The quinoa gives a plant-based protein punch, which fills you up and, more importantly, keeps you full.

29th June 20196th November 2023

Harissa chicken skewers

Chicken skewers are the perfect year-round dinner. They add a bit of heat to a salad in the winter and can be cooked on the barbecue in the summer.

I’ve used harissa paste in this recipe. It quickly adds a punch of flavour and just enough of a chilli kick without being too hot.
